Manna is produced by ash trees native to Sicily, that grow in the town of Castelbuono where Fiasconaro is located. In July and August, incisions are made in the bark of the trees and a creamy sap begins to flow. This bitter sap hardens to a sweet, crystalline white when it comes into contact with the hot, dry, Sicilian air. It is then harvested by hand from the trees using a special knife. The various environmental elements must all come together in order to create this miracle of nature.
